The journey in discovering this wine starts… in your nose. That’s right.

The aroma this Vinha Paz (Peace Vine) possesses is hypnotising. Perhaps this is because it’s a white wine filled with tropical nuances, with the scent of Summer, joy and fun.

These are things that make us sigh, especially now that Summer has come to an end.

This wine’s name is a massive contradiction in itself.

Why?

Because there is no peace after you’ve opened this bottle.

Peace?! What peace?!

You end up in a state that’s difficult to describe. All you can do is happily surrender and make the most of the incredible voyage this wine offers.

Coming to you directly from the marvellous terrains of the Dão region, this wine is made in a centuries-old estate where a family passionate about wine and vineyards has lived for five generations.

The producer, António Canto Moniz – who is also a surgeon in Porto – once asked his father, more as a bit of fun than anything else, to teach him how to make wine.

It was the rebirthing of a family history that’s over 150 years old.

That history started in the first wine cellar with granite lagars, built by António Canto Moniz’s great-great-grandfather. Today, the wine is made in the same place and follows traditional winemaking processes together with the most modern technology available.

We’ll also have you know that, for example, the iconic image on the label is of a gateway at Carreira Alta house where the producer’s sister lives and also where the cellar is located.

So much history has most probably whet your appetite and provoked an unruly thirst.

Here’s hoping you had the great idea of putting this Vinha Paz in the refrigerator as soon as you open the box, and all you have to do now is pop the cork and enjoy.

Recipe

Fried Allis Shad fish with roe açorda bread mixture

Ingredients
1 Allis Shad with approx. 1 kg

1 homestyle loaf of bread
6 garlic cloves
50 ml olive oil
Vegetable oil or olive oil for frying

2 lemons
Corn semolina
Chopped coriander
Salta and pepper
3 egg yolks
1 carrot
½ leek
1 onion

Preparation

Prepare the fish and reserve the roe.
Cut the fish into very thin slices.
Reserve the head and tail.
Peel and wash half the garlic cloves.
Season the fish slices with lemon juice, finely chopped garlic, salt and pepper.
Marinate in the refrigerator for 12 hours.

In 1.5 litres of water, boil the fish head and tail, the chopped carrot, onion, garlic and leek for 20 minutes.

Cut the bread into thin slices and place in a bowl. Pour the broth over the bread, so it’s well soaked.
In a pot, add olive oil and garlic cloves and let sauté.
Add the roe and mix until loose and separated.
Add the bread and mix well, letting it cook through.
Season with salt and pepper.

In a small bowl, beat the egg yolks.
Add a little bit of the bread mixture to the yolks and mix until they heat up.
Pour back into the pot, add chopped coriander and mix well.

Cover the fish slices in corn semolina on both sides and fry in the vegetable oil/olive oil until golden on both sides.

Drain the excess oil on kitchen paper.
Serve the fish and bread mixture (açorda) together accompanied with lemon wedges.
