The wine before you was produced calmly and at length, taking its time.
A pure Alentejo wine.
We’ll explain why. The Alicante Bouschet, Trincadeira and Aragonez grapes were carefully selected and hand harvested.
Part of the wine was vinified in earthenware wine vessels, a process used in the Alentejo for over two thousand years. The remaining portion of the batch was aged in modern stainless steel lagares.
The best of two worlds!
This wine is named Sátiro (Satyr) after the challenge and irony of joining processes separated by centuries.
It’s also called Clandestino (Clandestine) because of the difference in the production processes and the use of alternative techniques. It’s a wine with a unique production philosophy that combines the methods and ancestral know-how of the Alentejo region wines with new winery technologies.
The wines produced by Costa Vargas result from a family-led production and originate from vineyards installed at the Herdade das Assentes de Baico in the heart of the Alentejo, located between Cuba and Alvito and within the Vidigueira sub-region.

Winemaking Process and Ageing: Vinified in separate batches in earthenware vessels (talhas) and stainless-steel lagares. The talha batch was processed according to a method used in the Alentejo for over two thousand years. Totally artisanal process, complete wine tanning without the use of a pump, talhas filled by hand. Vinification executed with wine stalks/stems, without using selected yeasts or fermentation control processes. Long post-fermentative maceration, respecting the “traditional Talha wine” process.
Tasting: Presents ruby in colour with intense violet hues, ripe red fruit aromas.
The exuberant fruit, strength and youth revealed in the nose refer back to artisanal earthenware talha Alentejo wines.
A few black fruit and smoked spice notes. Fruit compotes and purée hinting at plum.
Velvety, round and smooth on the palate, rich and “greedy”, with “mineral” marks due to the clay in its origin. An intense set, potent mas balanced. Good structure of firm tannins and balanced acidity.
Pairing: Recommended for accompanying red meats, roasts, spicy dishes, pâtés and game.
