In 1999, a group of friends who were passionate about nature decided it was time to do something about their shared passion.

They planted 18 hectares of vine in the rich and fertile soils of the Herdade da Bombeira, a mere 3 kms from Mértola, right next to the Guadiana river.

Time has come to prove that they made the best decision and that, together, they ended up rejuvenating one of the most mystical and involving areas of the Alentejo.

Mértola was occupied by the Phoenicians, Romans, Arabs, Visigoths and Moors.

It was reconquered in 1238, during D. Sancho II’s reign and re-founded in 1254.

The city grew inside the castle walls and has unique beauty and surroundings. It’s well worth the visit. Trust us.

Mértola was the first location worldwide to obtain the Starlight Tourism Destination certification.

This means that the night sky in Mértola will probably leave you stunned and in awe of its incomparable vastness and beauty.

But there’s more. The city has an average of 286 cloudless nights per year.

As for the relationship between this beautiful city and wine, it started way back in the Roman era, of course.

Soil: Shale soils with low productive potential
Production/ha: 4 000 kgs
Wine storage: Horizontal at a constant temperature of 17°C

Winemaking Process
Manual harvest with the best grapes being selected in the cellar. Cold maceration for two days and alcoholic fermentation at 26°C. Ageing in French oak barrels during six months.

Tasting Notes
Intense forest fruit and black plum aroma balanced out with red pepper, tobacco, coffee and menthol notes. Full, well-rounded mouth with gentle tannins. Persistent finish.

Pairing/Serving
This wine can be opened immediately or during the next 10 years. Serve at 16-18°C. Pairs well with red meats, lamb, game, roast fish, codfish with plenty of olive oil and cheeses.

Recipe

Marinated Mushrooms

Ingredients

200 g Paris mushrooms
1 bunch of coriander
1 garlic clove
Olive oil
Salt flower
Balsamic vinegar

Preparation

Cut the mushrooms in four and place them in a large bowl.
Add the coriander, chopped garlic, salt, and drizzle a good amount of olive oil and balsamic vinegar over the top.
Cover with cling paper and leave in the refrigerator for 30 minutes before serving.
