Casa Américo Rosé


Casa Américo has an epic story that could very well be used in a movie.

The Seabra family patriarch, Américo, dreamt of one day producing wine in the land where he was born, Vila Nova de Tazém.

We’re talking about a small village in the Gouveia municipality, snuggled up to Serra da Estrela and boasting approximately 2100 inhabitants.

In 1967, Américo Seabra emigrated to the USA with his wife and seven children, making him give up on his dream.

However, it would be one of his children, Albano Seabra, to come back to Portugal to make his father’s dream come true.

Albano and his siblings recovered the 18th-century property and built a new winery.

This is how Casa Américo was born. It currently has 100 ha of vineyard, the oldest being more than 100 years old. Good old vines, aren’t they?

The Wine
Casa Américo was established by Américo Seabra, the family patriarch, who had the dream of producing wine in the village where he was born, Vila Nova de Tazém. The project came to life through his children, who recovered the 18th-century property and built a new winery. Casa Américo currently has 100 ha of vineyard, some of the oldest being more than 100 years old. They’re planted with the Dão region’s noblest varieties and located in poor granitic soil at an altitude of 500 and 600 metres.
The sub-region where they’re situated, Serra da Estrela, is one of the Dão’s most distinctive terroirs. It’s here that wines of unique freshness and elegance are produced.

Vineyards: These grapes are from a selection of red grapes from a 30-year-old plot in Vila Nova de Tazém. They are selected for presenting good maturation and moderate alcohol content.

Winemaking process
The grapes were totally destemmed and gently pressed, having minimal contact with the skins before extracting the first tear wort, followed by cooling and decantation at 12°C. Clean wort fermentation occurred in small stainless-steel vats at a controlled temperature of 16°C to preserve aromas and freshness.

Tasting Notes
Light salmon in colour. Raspberry and wildflower aroma. Very delicate mouth with lively acidity and a refreshing finish.

Caesar Crab Salad


240 gr of clean crab meat
300 gr Romain lettuce
80 gr croutons
60 gr grated parmesan cheese

Caesar dressing
200 ml mayonnaise
20 ml Dijon mustard
40 gr grated parmesan cheese
2 anchovy fillets
Juice and zest of ½ lemon
1 teaspoon Worcestershire sauce
½ teaspoon tabasco
½ teaspoon horseradish (optional)

Tip: If using a whole crab, add the crab eggs to the dressing


1 – For the dressing, place all the ingredients in a food processor or blend with a stick/hand blender
2 – Separate the lettuce leaves, wash and dry
3 – Cut the lettuce leaves into 2 cm strips, horizontally
4 – Place the strips of lettuce in a bowl, add the crab meat and half the dressing, mixing gently.
5 – Plate the salad and finalise with croutons, the grated parmesan cheese and the remaining dressing to taste.
